Grappa obtained from the distillation of the same blend of grapes that gave origin to our San Nicola, therefore mainly pomace of San Giovese and Cabernet Franc; these two give particular scents, a persistence and an aftertaste that ranges from fruit in alcohol to spices with a note of cloves
The distillation takes place in a bain-marie in double boiler stills, an ancient technique with slow and discontinuous extraction
Aging instead takes place in medium toasted Slavonian oak barrels and lasts for 18 months, during all this time the grappa obtains an intense amber color and the aromas become warmer, enveloping and balanced, the notes of spices are combined with a particular hint of almond and nutmeg
